Recipe: 干捞云吞面 Dried Wantan Mee

There are plenty sort of tastes for <Wantan Mee 云吞面>, some served in soup, some served in dried, some dark in color, some red in color..etc, therefore different countres and states have distinct way of culinary art or taste. Nevertheless the one me and my honey love the most is dried sort and red in color with chili, but these sort of taste merely found in certain stalls in Malacca and always packed of customers, so I decided to prepare my own and beyond my expectation it's tasted practically same as the one we bought from the famous stalls. 


Ingredients (A)
600g                   Pork belly
1 bunch               Vegetables
2-4 portions        Wantan mee
1 packet              Wantan Skin


Fillings and Seasonings ( For Wantan )
100g                   Prawn (diced)
100g                   Pork (minced)
3                         Water chestnuts (peeled and chopped)
2                         Egg white
1/2 tsp                Salt (or approprite amount)
1/2 tsp                Pepper (or approprite amount)
1 tsp                   Corn flour
1 tsp                   Sesame oil
1 tsp                   Sugar
1/4 cup               Water


Seasonings A ( For Marinated Pork Belly )
1/4 tsp                MSG (or approprite amount)
1/2 tsp                Salt (or approprite amount)
2 tbsp                 Light soy sauce
3 tbsp                 Sugar
2 tbsp                 Cooking wine
1 tbsp                 Sesame oil
3 tbsp                 Honey


Seasonings B ( For One Person Portion )
1 tbsp               Light soy sauce
1/4 tsp              Chicken stock granules
1/4 tsp              Pepper
1/2 tbsp            Fish sauce
1/2 tsp              Sugar
2-4 tbsp           Chili boh (as preference)
( all these seasonings melted into 2-4 tbsp hot water beforehand )








Method
  1. Marinated pork belly with salt, sugar, MSG, light soy sauce and leave for 40-60 minutes.
  2. Turn over the marinated pork every 20 minutes.
  3. Add cooking wine and sesame oil into marinated pork and stir well.
  4. Place the marinated pork on a skewer or plate.
  5. Grill in oven or microwave for 25-30 minutes at 200'c.
  6. Take out the grilled pork and leave for cooling.
  7. Spread honey over the entire grilled pork.
  8. Grill again in oven or microwave for another 3 minutes.
  9. Cut the grilled pork into slices. Set aside.



  1. Wantan filling: Mix the diced prawn, minced pork, water chestnuts, egg white, salt, sugar, pepper, corn flour and sesame oil and stir in one direction until sticky.
  2. Add water twice while stirring the mixture until obsorb completely.
  3. Use one piece of wantan skin to wrap up 1 tsp of filling.
  4. Cook in the boiling water until they cooked and float up.
  5. Cook the vegetables in boiling water.
  6. Set aside.
 







  1. Cook wantan mee into boiling water until tender.
  2. Remove and rinse into cold water.
  3. Re-put the wantan mee into boiling water once again for few second.
  4. Drain and dish on plate. 
  5. Melt the Seasoning B into boiling water and stir well.
  6. Pour onto the wantan mee and mix well.
  7. Add in grilled pork(char siew), vegetable and wantan on top.
  8. Serve hot.
