Recipe: Rainbow Coconut Jelly 彩虹椰汁啫哩

My very own recipe of making < Rainbow Coconut Jelly  彩虹椰汁啫哩> is extremely easy and simple method. I made this during 2012 Lunar New Year Eve for the guests coming on New Year, I wish to brighten up the day of every guest and bring the Lunar New Year to be more splendid with its rainbow colors. Guess all of you can make this jelly as easy as I do on certain celebrations as birthday party, feasts, New Year,  Christmas etc....

0.5 liter              Coconut milk
3-4                     Food colorings ( or more colors as your preference )
2 packets           Jelly flakes ( known as Agar-agar in Malaysia )
6 pieces             Pandan leaves ( can be add more for better fragrance )
2.5 liters            Water
1 tsp                  Salt
1 cup                 Sugar ( or depends on individual preference )

  1. Tie a knot to the panda leaves.
  2. Add 2.5 liters water into a pot and bring to boil.
  3. Put in one packet of Jelly flakes (Agar-agar) & pandan leaves into the boiling water, stir and cook until the jelly flakes totally dissolved.
  4. Add 1 cup of sugar gradually, taste it depends on individual preference. Those prefer sweeter can add more sugar and those dislike sweet can decrease sugar otherwise.
  5. Stir until the sugar dissolved.

  1. Take out the pandan leaves.
  2. Prepare 4 or more containers to pour in the mixture separately according to number of the colors you use.
  3. Mix in the colors before the mixture solidified.
  4. Put aside to let them solidified in room temperature. ( Usually will take half an hour time, the matter is depends on the thickness of the mixture, more jelly flakes will cause faster solidification and harder texture, more water will defer solidification and softer texture. )
  5. Cut the solidified jelly into cubes, and mix the colors into a bigger container.
  6. Set aside.


  1. Pour in the coconut milk and pandan leaves into a pot and bring to boil.
  2. Add in a packet of Jelly flakes ( Agar-agar) and stir until it's completely dissolved.
  3. Add 1 tsp of salt or depends on your preference. ( In fact coconut milk has had its original slightly salty taste. )
  4. Can add a little bit or no sugar, depends on your preference.
  5. Take out the pandan leaves.
  6. Pour in the coconut milk dissolved mixture into the container with rainbow-color jelly.
  7. Slightly stir the mixture in the container to make sure coconut milk jelly spreads evenly with its rainbow colors.
  8. Set aside and cool off in the room temperature before keep in cold storage.
