Recipe: Soy Sauce Drunken Chicken 豉油醉鸡

1                    Whole chicken ( marinated with seasonings A )
3-4 pieces      Ginger
3  bulbs         Shallot ( sliced )
1                    Star anise
2 stalks          Spring onion ( cut into 2 inches section )

Seasonings A ( For marinate chicken )
1 tbsp           Cooking wine ( or any other wine )
1 tbsp           Soy sauce
1 tsp             Pepper

Seasonings B
2 tbsp         Cooking wine ( or any other wine )
3 tbsp         Soy sauce
1 tbsp         Dark soy sauce
1 tbsp         Crystal sugar ( crushed )
1-2 cups     Water
1 tsp           Sesame oil
1 tsp           Pepper


  1. Marinade chicken with Seasonings A. Set aside for at least 30 minutes.
  2. Heat up wok with 3 tbsp cooking oil, stir-fry marinated chicken until lightly brown.
  3. Stir-fry gingers, green onions and shallots until fragrant.
  4. Add in Seasonings B and star anise, mix well and bring to boil.
  5. Covered with saucepan lid, reduce heat and cook until the chicken is tender and sauce is thick.

  1. Dish and garnish with spring onion.
  2. Serve hot.
