Recipe: Garlic Simmer-Fried Pork 大蒜红烧肉






Ingredients
300g            Streaky pork ( cut into cubes )
2 stalks        Green onion ( cut into small sections )
2 slices        Ginger
0.5 tsp         Chinese prickly ash
2 pieces       Star anise
1 stick         Cinnamon
2 pieces       Lilac
1 bulb         Amomum tsaoko
2 piece        Licorice root
1 tbsp          Dried chili ( blended ) or Thai chili powder
8 pips          Garlic ( deep-fried )
1 tbsp          Cornflour water 
1/4 tsp         Sesame oil


Seasonings
1 tbsp        Light soy sauce
1 tbsp        Dark soy sauce
1 cube       Fermented soya bean curd
1 tsp          Crystal sugar
0.5 tsp       MSG or sugar
3 bowl      Water
1/4 tsp       Sesame oil





Method
  1. Heat up wok with 2 tbsp cooking oil, sauté all the spices ingredients until fragrant except pork, garlic and cornflour water.
  2. Add streaky pork and stir-fry until aromatic.
  3. Add in all seasonings except sesame oil and bring to boil.
  4. Reduce heat and cover the wok with lid, simmer until the meat is tender and the sauce is thick.
  5. Add deep-fried garlic, cornflour water and sesame oil, mix well.
  6. The dishes is ready to serve.
